INSTRUCTIONS
Peel cucumbers and cut in half lengthwise. Scoop out seeds with a spoon; then cut crosswise in 1/2-inch slices. Arrange slices on a flat plate and sprinkle well with salt. Let stand 1 hour; then squeeze each slice gently to press out as much moisture as possible. Heat sesame oil. Add cucumbers and stir-fry until softened and translucent (1 to 2 minutes).
