INSTRUCTIONS
Preheat oven to 200c/400f.
1 Lay the mussels in their half shell in a gratin dish. Heat the olive oil
in a small frying pan, and fry the bacon and onion. Stir in the chopped
parsley, and cover the mussels with the mixture.
2 Process the bread with the herbs in a food processor to make breadcrumbs.
Spoon over the mussels and bake in the oven for a few minutes until the
breadcrumbs are crisp and golden.
