One appetizer/finger food that i've made in the past for special
presentations is stuffed snow peas. They're really easy to make: simply
blanche the snow peas, remove the tough string along the side of each pea
pod, split the pod open vertically on one side and stuff with about a
tablespoon of cream cheese. i usually go to one of the gourmet food
specialty stores and get a fancy cream cheese to use. If you place about
50-100 pea pods in a spiral or circular pattern on a platter, it really
makes an elegant presentation.
