INGREDIENTS

2 Eggs
1 c Soy milk
3 tb Oil
1 c Grated carrot
1 c Raisins
2 tb Sesame seeds
3 tb Sunflower seeds
1 ts Mixed spice
1 1/2 c Coconut
1 c Wholemeal flour
1 c Rye flour
3 ts Baking powder

INSTRUCTIONS

Reheat oven to 375°F, prepare pans. Put the first nine ingredients into a
bowl & mix well. Add the flours & baking powder & blend until just mixed.
Spoon into pans & bake for 15-20 mins. Makes 15 muffins. Note: This is THE
muffin for the health conscious.
