This is a recipie I came up with last year for a pot luck dinner and it
went over really well!
Here's how to make them: Shred the mushrooms with a cheese grater or food
processor. The onions can be finely chopped or shredded like the mushrooms.
In a large bowl combine the mushrooms and onions. Add the egg white to the
mixture and stir until even. Thicken with the Matzo Meal.
You may need more or less of the Matzo meal, depending on how watery your
mushrooms get. Once the mixture is thick enough, add your seasonings and
form it into patties (As big you want them!) and cook them on medium heat
in a salted, nonstick skillet or use a non-fat spray. Each burger should
take about 5 minutes to cook on each side. They turn a rather ugly shade of
brown when their done. Eat them like regular burgers with your favorite
bread and veggies, with pasta or throw them in a salad! These are really
easy to make and satisfying to boot!
This recipie should make about 6-8 burgers.
