INGREDIENTS

1/4 c Sugar
1 tb Water
1 c Lime Juice
2 sm Limes; thinly sliced
2 ts Caribbean Jerk Spice
2 ts Rice Wine Vinegar

INSTRUCTIONS

Put the sugar and water in a small saucepan over moderate heat. Cook until
the sugar caramelizes to a light golden brown. Carefully add the lime
juice, limes, jerk spice and rice wine vinegar. Cook over a low heat for 15
minutes. Cool and serve at room temperature.
