Sweet onions; (Walla Walla, Vidalia, etc) -or- shallots, if the price is right |

INSTRUCTIONS
Peel and thinly slice onion. Combine wine, vinegar and sugar in sauce pan.
Heat gently until sugar is dissolved. Add onions. They will fill the pan
but will wilt. Cook over medium until onions are transparent and soft
enough to cut with a spoon, 25-30 minutes.
Remove from heat and season with salt and pepper. While still hot, spoon
into sterilized jars. Seal and store in cool place.
