INSTRUCTIONS
Heat oil enough to come 2 inches up the sides of a pan to 325 F. Combine
sugar, salt, cayenne and cumin in a bowl and set aside. Peel sweet potato
and slice as thinly as possible, preferably with a mandolin or electric
slicer. Fry in 2 batches for 4 to 5 minutes each, until crisp but not
browned. Drain on paper towels. Sprinkle seasoning over slices. Makes 4
servings.
