INGREDIENTS
| 2 | md | Sweet potatoes ( l pound, peeled and shredded |
| 2 | md | Green onions, finely chopped (2 tablespoons) |
| 1/4 | c | All-purpose flour |
| 1/2 | ts | Salt |
| 1/4 | ts | Pepper |
| 1 | Egg, slightly beaten | |
| 1 | c | Sour cream |
| Sliced pecans, if desired |
INSTRUCTIONS
Heat oven to 400F. Grease cookie sheet. Mix all ingredients except sour cream and pecans. Drop sweet potato mixture by teaspoonfuls onto cookie sheet; flatten slightly. Bake 12 to 15 minutes, turning once, until golden brown. Top with sour cream. Garnish with pecans. About 30 appetizers. * Shredded white potatoes, blotted dry with paper towels, can be substituted for the sweet potatoes.
