INSTRUCTIONS
1. In a medium bowl, beat the egg. Add the sweet potatoes, matzo meal,
brown sugar, ginger and salt; stir until combined.
2. Pour the oil 1/4" deep into a large skillet. Heat the oil over medium-
high heat until it bubbles when a little sweet potato is dropped in. Drop
the batter by tablespoonsful into the oil and flatten slightly with the
back of a spoon. Cook until golden on bottom; turn and cook until golden on
second side. Drain on paper towels.
Variation: Omit the ginger; add 1/2 teaspoon ground cinnamon.
