Ingredients: 1 9 inch pie crust; unbaked and fluted; 2 md Sweet potatoes; diced; 1 Stick unsalted butter; 1 c Sugar; 2 lg Eggs; beaten; 1/4 c Buttermilk; 1/2 ts Vanilla extract

This is a joy of such transcendent quality that no persecution or pain or deprivation can diminish, nor wealth or success or prosperity can enhance.

INGREDIENTS

1		9 inch pie crust; unbaked and fluted
2	md	Sweet potatoes; diced
1		Stick unsalted butter
1	c	Sugar
2	lg	Eggs; beaten
1/4	c	Buttermilk
1/2	ts	Vanilla extract

INSTRUCTIONS

Preheat oven to 325. Place the potatoes in cold water, bring to a boil and
cook until tender, 15-20 minutes. Drain, and mash the potatoes while hot
with the butter and sugar. Let this mixture cool slightly and stir in the
beaten eggs, buttermilk and vanilla.
