Sweet potatoes; peeled & sliced about 1/4 inch thick |

INSTRUCTIONS
Heat a bit of oil in a skillet. Saute onion & ginger. Add potatoes & 1/2 -
3/4 cup water. Bring to a boil & reduce heat & cover. Cook until tender but
still a bit firm (make sense?) Drain, put in salad bowl & refrigerate. Make
dressing & pour over & toss gently.
