INGREDIENTS

3 lb Sweet potatoes; cooked, peeled and
; cubed
1/2 c Finely chopped onion
1 c Chopped green pepper
1 1/2 ts Salt; optional
1/4 ts Pepper
1 1/2 c Light or regular mayonnaise
1 ds Hot pepper sauce

INSTRUCTIONS

Combine first five ingredients in a large bowl. Stir in mayonnaise and hot
pepper sauce; mix well. Cover and refrigerate at least 1 hour before
serving. Yield: 10 servings. Diabetic Exchanges: One serving (with no added
salt and using light mayonnaise) equals 2 starch, 1-1!2 fat; also, 217
calories, 167 mg sodium, 5 mg cholesterol, 38 gm carbohydrate, 4 gm
protein, 7 gm tat.
