INSTRUCTIONS
DRESSING
GARNISH
Place sliced cucumbers in serving bowl and sprinkle with salt to taste. Mix
dressing ingredients in a small bowl and pour over cucumber slices. Stir to
coat. Sprinkle with dried chilies to taste. Stir. Serve cold. (This dish
can be made several hours ahead.)
*the same chilies you use at the pizza parlour!

: You know how in Italian restaurants the waiter brings bread with your
water and cocktails? In Taiwan the waiter brings this dish and a bowl of
peanuts. Obviously, it is not really a "pickle", but a salad. If you can't
find (or won't pay for) English cucumbers, use the garden-variety cuke,
peeled and seeded.
