INSTRUCTIONS
1 ts Unflavored gelatin
1 c Half and half
1/2 ts Grated fresh ginger root
1/3 c Sugar
2 tb Light corn syrup
In small saucepan, sprinkle gelatin over half and
half; let stand 1 minute. Cook and stir over low heat
until gelatin dissolves. Add grated ginger, sugar
and corn syrup. In blender or food processor fitted
with metal blade, finely
chop peaches. Combine ginger mixture with chopped
peaches. Add half of chopped cookies; reserve
remaining half. Pour into ice cream canister. Freeze
in ice cream maker according to manufacturer's
directions and when frozen stir in reserved chopped
cookies before serving. Makes about 1 quart. Per
