INSTRUCTIONS
1. Spray 8 1/2 x 4 1/2 x 2 1/2-inch loaf pan with cooking spray.
2. In large skillet heat corn oil over medium-high heat. Add green pepper,
onion and garlic; stirring frequently, cook 4 minutes or until tender.
Remove
from heat.
3. In large bowl combine ground beef, egg whites, oats, 1/2 cup barbecue
sauce
and chilies. Stir in cooked vegetables. Spoon into loaf pan.
4. Bake in 350 F oven for 1 hour. Drain excess liquid.
5. Invert loaf onto serving platter. Spoon remaining 1/4 cup barbecue
sauce
over top. Let stand 10 minutes before slicing.
Makes 8 servings.
* Use ground round or 90 percent lean ground beef
