INGREDIENTS

6 md Potatoes, cooked til tender & sliced thin
1 lg Onion, sliced thin
1 Green pepper, sliced thin
1 sm Jar Pimentoes
1 c Sour cream
1 cn Cream of chicken soup
1 ts Salt and pepper
4 Eggs, hard-boiled
1 c Bread crumbs
1 c Sharp cheddar cheese, shredded

INSTRUCTIONS

Mix sour cream and soup in 2 qt. casserole or 13 x 9 x 2 baking dish.  Mix
in everything else, saving 1 egg and crumbs for topping.
Bake 350 oven for 30 min.  If made ahead of time and kept refrigerated,
then bake for 50 min.
