INGREDIENTS

1 c Lowfat Tofu, thawed, shredded or, diced
1/4 c Celery, diced
1/4 c Onion, diced
Parsley, to taste
Chives, to taste
Nonfat Mayonnaise, to taste

INSTRUCTIONS

What to do with frozen tofu? Nikki Hazelton thinks it tastes like chicken
and suggests the following preparation. First she thaws the tofu and
squeezes the excess water out. While I don't think this tastes much like
chicken, I do think it makes a great sandwich spread. Enjoy.
