INSTRUCTIONS

Mix above ingredients in a blender or processor until smooth.
Grease a 9 x 13" pan. Place 6 slices of bread (challah works well) in a
single layer over the bottom.
Pour the tofu mixture evenly over the bread. Sprinkle with 1/2 tsp.
cinnamon. Bake at 350 F for 30 minutes or until set. Serve with maple or
corn syrup if desired.
APPLESAUCE VARIATION: Before pouring the tofu mixture over the bread, spoon
1/3 cup thick applesauce on each slice. Also, try sliced peaches or pears,
or even bananas.
