Vegan Tofu, Mcrecipe, *new, Eat-lf 4 servings

INGREDIENTS

10 oz Firm tofu
1/2 Green bell pepper; diced
1 Stalk celery; diced
1 Carrot; grated
4 sm Green onions; sliced
1 tb Parsley
1 tb Capers
2 tb Tofu based mayonnaise substitute
1 tb Prepared mustard
1/2 ts Fresh lemon juice
1/4 ts Pepper
1/4 ts Thyme

INSTRUCTIONS

Mix all ingredients together and serve on your favorite bread with sprouts,
tomatoes and cucumbers.
