INGREDIENTS

1 Shallot, minced
1 Clove garlic, minced
1 T Olive oil
1/4 c Dry white wine
1 Tomato, finely chopped
2 T Chopped fresh or frozen
chives
2 T Lemon juice
1/4 t Salt
1/8 t Pepper
Fresh chives, for garnish

INSTRUCTIONS

1998    
Cook shallot and garlic in oil in a large skillet over medium-high
heat, stirring constantly, 1 minute. Add wine, and cook until reduced
by half. Stir in tomato, chopped chives, and next 3 ingredients.  Spoon
over salmon or other fish and serve immediately. Garnish if  desired.
