INSTRUCTIONS
Peel onion and chop finely.
Melt butter in a large saucepan or frying pan and cook onion until soft but
not coloured.
Add rice and stir to coat in onion mixture.
Add tomato puree and 1 cup of chicken stock. Bring to the boil. Stir until
liquid is absorbed.
Add another cup of stock and stir until liquid is absorbed.
Continue in this manner until all stock is absorbed and rice is tender but
still firm to the bite and mixture is creamy.
Cut sausages into 3 and stir through rice with salt and pepper.
Serve with torn basil and parmesan cheese shavings.
