INSTRUCTIONS
Lightly toast one side of the bread under a pre-heated grill.
Mix together the remaining ingredients and top the untoasted side of the
bread slices. Drizzle over a little extra olive oil and place back under
the grill for 2-3 minutes until bread is crispy and the tomatoes have
softened slightly.
