INGREDIENTS
1/4 | c | Pine nuts* |
2 | 16 ounce packages frozen | |
French-style green beans | ||

2 | Garlic cloves, minced | |
2 | t | Dried Italian seasoning |
1 | T | Olive oil |
4 | Plum tomatoes, chopped | |
2 | T | Lemon juice |
1 | t | Salt |
1/2 | t | Pepper |
1 | 4 ounce package crumbled | |
feta cheese |
INSTRUCTIONS
Bake pine nuts in a shallow pan at 350øF for 6 to 8 minutes or until toasted. Set aside. Drain green beans well, pressing between layers of paper towels. Saute garlic and Italian seasoning in hot oil in a large skillet over medium heat 1 minute; add green beans, and saute 5 to 7 minutes. Stir in tomato, and cook, stirring constantly, 2 minutes or until thoroughly heated. Stir in lemon juice, salt, and pepper. Sprinkle with cheese and pine nuts. Yield: 6 servings * 1/4 cup toasted walnuts may be substituted for pine nuts.
