1 tb OLIVE OIL
1 md ONION CHOPPED
2 md ZUCCHINI CHOPPED
2 md YELLOW SQUASH CHOPPED
1 md RED BELL PEPPER CHOPPED
2 c MUSHROOMS SLICED
2 cl GARLIC MINCED
SALT AND PEPPER TO TASTE
1/4 ts OREGANO
1 lb COOKED CHEESE TORTELLINI
1/4 c GRATED PARMESAN CHEESE

INSTRUCTIONS

HEAT OLIVE OIL IN A LARGE SKILLET OVER HIGH HEAT. ADD ONION, ZUCCHINI,
SQUASH, AND BELL PEPPER. STIR IN MUSHROOMS, GARLIC, OREGANO, SALT AND
PEPPER. COOK AND STIR 7 MINS. OR UNTIL VEGETABLES ARE CRISP-TENDER. TOSS
WITH TORTELLINI AND PARMESAN CHEESE.
