INGREDIENTS
2/3 | c | Unsweetened apple juice |

INSTRUCTIONS
Combine first 3 ingredients in a small saucepan; stir with a wire whisk until blended. Bring to a boil over medium-high heat, and cook 1 minute, stirring constantly. Remove from heat, and let cool. Combine cantaloupe and next 4 ingredients in a shallow bowl, and add apple juice mixture, tossing gently. Cover and chill for 1 hour. Yield: 4 servings (serving size: 1 cup).
