Salads 4 Servings

INGREDIENTS

1 lb Large shrimp; shelled, deveined,
1/2 c Celery; diced
1 sm Onion; chopped
2 Green onions (tops included); sliced thin
2 tb Flaked coconut
2 tb Fresh lemon juice
1/3 c Mayonnaise; (more if you like)
1/2 ts Curry powder; or to taste
Salt & fresh ground black pepper; to taste
2 ts Fresh dill; chopped

INSTRUCTIONS

Place shrimp in boiling salted water and remove after 5 minutes. Allow them
to cool. Add all other ingredients, mix well. Serve chilled on bed of
lettuce. Garnish with sliced tomatoes. Makes 3 to 4 servings.
