INGREDIENTS

2 T Butter or bacon fat
3/4 c Rice
1/2 c Chopped green pepper
1/2 c Chopped onion
1 Garlic clove
1 VEG-ALL Mixed Vegetables
16 oz
1 Stewed tomatoes, 16 oz
1 Chicken broth, 12 oz
1 Tuna, flaked 12.5 oz
1/2 c Shredded cheddar cheese

INSTRUCTIONS

Heat fat in skillet. Add rice, green pepper, onion and garlic; cook 5
minutes. Drain VEG-ALL. Combine rice with stewed tomatoes and chicken
broth. Bring to boil, cover and simmer until rice is cooked, about 25
minutes. Stir in tuna and vegetables; sprinkle cheese over top. Heatt
