If your New Year's resolutions include an effort to eat better in 1999,
you're probably enjoying the month of January at Recipe-a-Day. The Cook &
Kitchen Staff are in our final week of Recipe-a-Day~Light.
If you have never tried substituting ground turkey in some of your
hamburger-based recipes, The Kitchen Staff strongly recommends you give it
a chance. You'll find that ground turkey possesses the same texture as
minced steak, and with much less fat. Ground turkey readily absorbs nearly
any seasoning during the browning process. Try it, we think you'll be
pleasantly surprised.
Today's recipe is a fresh look for your same-old hamburgers, with a
honey-mustard twist. You'll find the ground turkey-burger produces a hearty
meal with only 320 calories and 6 grams of fat; a dramatic reduction in
both calories and fat from your conventional burger.
Prepare a grill or cook in a heavy skillet over medium heat setting. (The
Kitchen Staff strongly recommends grilling as your cooking method.)
In a small bowl, whisk together mustard and honey until smooth. (You may
find that heating the honey for a few seconds in the microwave makes the
blending process a little easier.)
In a mixing bowl, combine ground turkey with three tablespoons of the
mustard-honey mixture. Add salt and pepper and blend with freshly cleaned
hands. Form the mixture into four burgers, each an inch thick.
Lightly brush the burgers on both sides with the canola oil. Grill until
cooked through (be sure there are no pink centers).This usually takes about
8 minutes per side, but grilling time may vary, so watch closely. Brush the
burgers with the remaining mustard and honey mixture. Serve on buns with
garnish, if so desired.
