INGREDIENTS

1 c Mayonnaise
1 ts Dijon mustard
1 c Watercress; stems removed
2 tb Fresh lemon juice
Salt and pepper; to taste
12 sl Black bread; 1/4 inch thick
Mesclun; or young lettuce
4 sl Ripe tomato
12 sl Roasted turkey breast
4 sl Brie cheese
1 Haas avocado; peeled halved and
; thinly sliced
1 c Watercress leaves

How to Prepare the Mayonnaise:
1. Place the mayonnaise, mustard, watercress, and lemon juice in a blender
and puree until smooth (if too thick, add a little water).
2. Season with salt and pepper to taste.
How to Prepare the Turkey Club:
1. For each sandwich, lay three slices of bread side by side.
2. Spread a layer of the mayonnaise and a small handful of mesclun on one
slice of bread and top with a slice of tomato.
3. On the next slice, place the turkey, brie, and a fourth of the avocado
slices. Stack the two slices of bread and top with the third.
4. Cut the sandwich in half on the diagonal.
