1/2 | Fresh peeled and cored | |
pineapple cut in 1 in | ||
2 | Oranges, peeled quartered | |
cut in 1 in cubes | ||
Hot cooked rice | ||
Seedless red and green | ||
grapes for garnish |
INSTRUCTIONS
In large bowl combine oil, honey, ginger, and soy sauce. Remove 1/4 cup and reserve. Place chicken in marinade, stirring to coat. Cover and refrigerate for 3 hours. Heat grill or broiler. Thread chicken, pineapple and oranges onto skewers. Cook about 5 minutes. Baste with reserved marinade and turn. Cook 5 minutes, or until chicken is no longer pink in center.
