INSTRUCTIONS
In a large bowl, combine the veal, bread crumbs, egg, salt, and pepper; mix well. Divide the mixture into 8 equal amounts and make 8 patties. Top each of 4 patties with a piece of ham and a piece of cheese. Fold the ham over the cheese, then top each with another veal patty. Use your fingers to pinch and seal the patty edges. Coat a large skillet with nonstick vegetable spray. Heat the skillet over medium heat and cook the burgers for 14 to 16 minutes, or until no pink remains, turning once.
