INGREDIENTS

2 c Finely diced watermelon
2 Minced jalapenos
2 tb Red onion, finely diced
2 tb Cilantro, chopped
1 tb Parsley, flat leaf, chopped
1/8 ts Ginger, grated (optional)
1/2 ts Salt
1/2 ts Pepper

INSTRUCTIONS

Carefully mix all ingredients and let sit for 30 minutes to blend flavors.
Best when used within a few hours of making. Excellent on seafood.
