INGREDIENTS

16 oz White beans; 1 1/2 cups cooked
1/3 c Red peppers; roasted
1 Clove garlic; minced
2 tb Fresh lemon juice; up to 3
2 tb Fresh parsley; chopped
Salt and pepper to taste

INSTRUCTIONS

1. Combine beans, red pepper, garlic and lemon juice in a food processor.
2. Blend until smooth.
3. Stir in parsley, salt and pepper.
Variations: Use roasted garlic. Substitute basil or dill for parsley.
