INGREDIENTS

1 lb Dried white beans
1 Onion – peeled and cut in
half
3 Garlic cloves
1/2 c Olive oil
1 16 oz. can white tuna in
water
1 Green pepper – chopped
1 Red pepper – chopped
1 Red onion – chopped
1 Lemon, juice of
1 Arugula – chopped

INSTRUCTIONS

Directions: Soak the white beans overnight to soften. Place in a  large
pot of water with garlic cloves and onion. Simmer for 1 hour.  Remove
beans and strain. Mix remaining ingredients. Add salt and  pepper to
taste. As an alternative, you can use white cannelloni  beans,
pre-softened, in place of the dry white beans.  Converted by MC_Buster.
