INSTRUCTIONS

cherry clusters (4 1/2 lb)
1. Pat fruit completely dry. Place 2 1/2 cups white chocolate and 3
tablespoons shortening in top of a double boiler; set aside. Fill bottom
pan with 1 inch water. Over medium heat, bring water to steaming (120
degrees). Remove from heat, place pan with white chocolate over water, and
stir until melted, about 5 minutes.
2. Stir half of fruit (4 cups) into white chocolate. Drop rounded teaspoons
of mixture onto lined pans; chill to firm. Repeat with remaining white
chocolate, 3 tablespoons shortening and cherries. Serve fruit, chill
airtight up to 2 weeks or freeze up to 1 month.
