INGREDIENTS

4 | oz | Mushrooms, sliced 1 1/2 c. |
2 | Green onions, thinly sliced | |
2 | T | Butter |
2 1/4 | c | Water |
1/4 | c | Dry white wine |
1 | t | Salt |
1/4 | t | Pepper |
1 | c | Shredded Monterey Jack |

INSTRUCTIONS
Cook and stir rice, mushroom and onions in butter in 10" skillet over med heat until onions are tender, about 5 min. Stir in water, wine, salt and pepper. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer until tender, about 40-45 min.; drain if necessary. Stir in cheese.
