INSTRUCTIONS
Wash wild rice in 3 changes of hot water; drain. Combine wild rice and next
3 ingredients in a saucepan; bring mixture to a boil. Cover, reduce heat,
and simmer 50 to 60 minutes or until rice is tender; drain, if necessary,
and set mixture aside.
Combine raisins and sherry; set aside. Combine orange rind and next 3
ingredients, set aside.
Combine rice, reserved raisin mixture, apple, green onions and sunflower
kernels, Add orange rind mixture; toss gently. Cover and chill at least 8
hours. Stir before serving.
Per serving: 249 Calories; 1g Fat (4% calories from fat); 8g Protein; 53g
Carbohydrate; 0mg Cholesterol; 538mg Sodium
