Meats Rice 4 Servings

INGREDIENTS

1 c Uncooked wild rice
5 1/2 c Chicken broth or stock
1 c Golden raisins
1 c Pecan halves
4 Scallions, thinly sliced
Grated peel of 1 orange
1/3 c Orange juice
1/4 c Olive oil
1 1/2 t Salt
Freshly ground pepper, to
taste

INSTRUCTIONS

Place rice in strainer; rinse thoroughly under cold water. Place rice
in medium size heavy saucepan. Add chicken broth; heat to boiling.
Reduce heat; simmer uncovered 45-60 minutes or until rice is tender.
Drain and place in bowl. Add remaining ingredients; toss gently. Let
stand at least 2 hours for flavors to develop. Serve at room
temperature or heat before serving. Serves 6-8.  busted by sooz  Recipe
