INGREDIENTS
1 | c | Uncooked wild rice |
5 1/2 | c | Chicken broth or stock |
1 | c | Golden raisins |
1 | c | Pecan halves |
4 | Scallions, thinly sliced | |
Grated peel of 1 orange | ||
1/3 | c | Orange juice |
1/4 | c | Olive oil |
1 1/2 | t | Salt |
Freshly ground pepper, to | ||

INSTRUCTIONS
Place rice in strainer; rinse thoroughly under cold water. Place rice in medium size heavy saucepan. Add chicken broth; heat to boiling. Reduce heat; simmer uncovered 45-60 minutes or until rice is tender. Drain and place in bowl. Add remaining ingredients; toss gently. Let stand at least 2 hours for flavors to develop.
