INSTRUCTIONS
In a large bowl, whisk together olive oil, lime juice, cilantro, cumin,
salt and pepper. Add lima beans, black beans, red kidney beans, red and
yellow bell peppers, onion, corn and jalapeno peppers. Toss gently. Chill
until ready to serve. Serve garnished with cilantro sprigs.
