INGREDIENTS
1 c. flour
3 c. sugar
3 sticks margarine
8 c. zucchini (peeled, seeds removed — and sliced thin)
2/3 c. lemon juice
1 tsp. cinnamon
INSTRUCTIONS
Mix flour, 2 c. of sugar and margarine until it forms crumbs. Take half of crumb mixture and pat into a cookie sheet(15 1/2 x 10 1/2). Bake at 375 degreesn for 9 to 10 min. Cool. Cook zucchini, 1 c. sugar, juice and cinnamon in large pot until zucchini is Ginger Brown AMISH PIE DOUGH (crust) 6 c. flour 1 lb. lard 1 tsp. salt 1 Tbsp. vinegar (cider) 1 Tbsp. sugar 1 egg Combine flour and lard, cut together until fine, add sugar and salt. Beat eggs in a 1 c. measure, add vinegar. Fill with cold water. Dump all at once into flour mixture and stir with a fork. Makes 6 shells or 3 covered pies. - Helen McCracken
