Irish Oatmeal with Dried Fruit and Honey – Martha Stewart

INGREDIENTS

2 c Apple cider or juice
1 Cinnamon stick
1/4 ts Salt
1 c Irish oatmeal
5 oz Dried peach, apricot, and pear halves in any combination, cut into 3/8 inch dice (about 1 C)
Honey or dark-brown sugar
1/2 c Low-fat milk, warmed

INSTRUCTIONS

1. In a heavy saucepan, bring 2 C water, the apple cider, cinnamon stick,
and salt to a boil. Add oatmeal, stir until smooth, and return to a boil.
Lower heat and simmer, stirring occasionally, for about 30 minutes.
2. Remove saucepan from heat. Discard the cinnamon stick and stir in all
but about 1/4 C of the dried fruit.
3. Divide oatmeal among 4 bowls and top with honey, if desired. Garnish
with remaining fruit; serve with warm milk.
