Minted Grapefruit and Honey Marinade

INGREDIENTS

1 c Fresh grapefruit juice
3 tb Vodka; optional
1 tb Honey
3 tb Chopped fresh mint
1 tb Grated grapefruit zest
2 ts Grated fresh ginger
1 ts Ground coriander seed
1 Jalapeño pepper; seeded and minced

INSTRUCTIONS

Good with skinless, boneless chicken breasts or turkey breast cutlets, and
excellent with swordfish and shrimp.
In a small bowl, whisk together the grapefruit juice, vodka and honey. Stir
in the remaining ingredients. Place the poultry or fish in a shallow
ceramic or glass dish, and add marinade. Turn to coat. Use immediately, or
cover and refrigerate, turning occasionally for 1 to 2 hours. Makes about 1
1/4    cups.
