As Christians, our lives should be marked by joy (Phil. 4:4), taste like joy (Gal 5:22), and be filled with the fullness of joy (John 15:11). Busyness attacks all of that. One study found that commuters experience greater levels of stress than fighter pilots and riot police. That’s what we are facing. When our lives are frantic and frenzied, we are prone to anxiety, resentment, impatience, and irritability.

Many times great difficulties precede special works of God. You can even say that God wins His greatest victories in the midst of apparent defeat. This can be clearly demonstrated in the life of our Lord on earth. When Jesus was crucified and placed in the tomb, it looked like the forces of unrighteousness had triumphed. However, it was in this time of apparent defeat that our victory for our salvation was won. This time of apparent defeat was followed by the resurrection of Christ.

Potato and Rajas Tacos

INGREDIENTS

3 md Boiling potatoes, peeled and cut; into 1/2" dice
4 c Creamy rajas,; recipe follows

INSTRUCTIONS

Bring a medium saucepan of salted water to a boil and cook the potatoes
until just tender, being careful not to overcook, 6 to 8 minutes. Drain,
pat dry and spread in a single layer on a tray to cool. When ready to
serve, heat the rajas in a medium saucepan over medium low heat, stirring
frequently, just to heat through. Add the potatoes and stir occasionally
until heated through. For potato and rajas tacos, toast 24 small Corn
Tortillas and keep warm. For each taco, stack 2 tortillas and layer with
the potato rajas mixture. Top with Salsa Fresca and an avocado slice and
serve.
