Skewered Sea Scallops

INGREDIENTS

1 1/2 lb Large sea scallops
1/2 c Spicy seasoned tomato juice
1 tb Red wine vinegar
3 Quartered and separated onions
2 Bell peppers red and green
18 Cherry tomatoes
1 tb Olive oil
1 tb Soy sauce

INSTRUCTIONS

Marinate scallops in mixture of tomato juice nad vinegar for one hour.
Reserve marinade, thread drained scallops on skewers alternating with
vegetables. Combine oil, soy sauce and 2 tablespoons reserved marinade.
Brush mixture on skewered scallops and vegetables,. Broil or barbecue about
5 inches from heat source, for 10-12 minutes, turning occasionally to broil
evenly.
