Tomato and Chive Topping

INGREDIENTS

1 Shallot; minced
1 Clove garlic; minced
1 tb Olive oil
1/4 c Dry white wine
1 lg Tomato; finely chopped
2 tb Chopped fresh or frozen chives
2 tb Lemon juice
1/4 ts Salt
1/8 ts Pepper
Fresh chives; for garnish

INSTRUCTIONS

Cook shallot and garlic in oil in a large skillet over medium-high heat,
stirring constantly, 1 minute. Add wine, and cook until reduced by half.
Stir in tomato, chopped chives, and next 3 ingredients. Spoon over salmon
or other fish and serve immediately. Garnish if desired. Makes about 1 cup.
