Why name joy the gift in trials? Because trials keep us from becoming complacent about our loving God and Savior when we are forced to our knees and the tears won’t stop. It is only then that our communion with our God is the purest. Trials drive us to run boldly to the throne of grace, to the safety of being on our faces in the presence of God, and to spend time in deep communion with God. When we are hurting, we don’t suffer as much from weak, shallow, and meaningless minutes with the Lord, We learn to relish and anticipate hours with God! The experience of communion and intimate fellowship with God is the very depiction of joy!

Zuchinni Squash Casserole

INGREDIENTS

6 md Zuchinni; 1/4 inch slices
1 lb Ground beef
1 cn Mushroom soup
1 md Onion; finely chopped
1 ts Salt
1/4 ts Pepper
1/2 ts Oregano
1/3 lb Cheddar cheese; grated
1 c Cracker crumbs

INSTRUCTIONS

Boil zuchinni slices in small amount of water for 6 minutes; drain. While
squash is cooking, brown ground meat; drain off fat. Combine with remaining
ingredients. Mix well. Add squash and stir. Pour into greased 2-quart
casserole or 2 1-quart casseroles. Options: Can use onion soup instead of
onion, especially if more liquid is needed (some squashes are dry) and add
no water at all. Celery soup or chicken soup can also be used.
