Avocado Summer Salad

INGREDIENTS

1 Avocado peeled and mashed
2 Onions chopped
2 Tomatoes chopped
3 tb Lettuce chopped; (3 to 4)
1 Sprig spring onion green chopped
Salt to taste
Pepper to taste
2 tb Olive or salad oil
1/2 tb White vinegar
Salt to taste
Pepper to taste
1 ts Lemon juice
1/2 ts Sugar

INSTRUCTIONS

FOR DRESSING
Mix all ingredients for dressing and chill.
Mix all ingredients for salad except lettuce and chill.
Just before serving, pour dressing, add lettuce, toss well.
Serve chilled.
Making time: 15 minutes (except chilling)
Makes: 4 servings
