Now I know there are many dangers of striving for excellence. After all, haven’t we learned that Satan will take anything we do for good and seek to bring forth evil. We have been been taught, 2 Corinthians 2:11, to not be “ignorant of his schemes.” I know if we are not careful, a pursuit of excellence can lead to pride whereby we look down on others or desire to draw personal attention to ourselves or seek to be man-pleasers. I know it can lead to a reliance on our own strength and not God’s strength. I know it can lead to misplaced goals that believe the product is more important than the spiritual goals it aims to produce. I know it can lead to misplaced trust that excellence alone can somehow achieve God’s purposes. And I know it can lead to misplaced methods, looking to worldly techniques more than Scripture. I know all of these and now you do as well, but we can’t operate in fear as an excuse to excuse the behavior expected of us from the Lord.

Chicken Curry with Vegetables

INGREDIENTS

1/2 Brown onion
A 2 cm; (3/4 in) piece of
; ginger
2 Cloves garlic
3 Tomatoes
150 g Mushrooms; (3 1/2 oz)
2 c Cauliflower; divided into small
; flowerets
1 tb Peanut or canola oil
1/2 ts Fennel
1/4 ts Cummin seeds
2 ts Curry powder
4 Skinless chicken pieces on the bone; eg. thigh, (4 to 6)
; drumstick
200 g Baby spinach leaves; (7 oz)
1/2 ts Hot chilli paste

INSTRUCTIONS

Blend onion, ginger and garlic to a fine pur.e. Alternatively, chop
finely by hand.
Wash and chop tomatoes. Wash and slice mushrooms. Wash cauliflower and
spinach.
Heat wok. Add oil and when oil is hot, add fennel seeds, cummin seeds
and pur.ed onion, ginger and garlic. Cook on medium heat without
browning for 3 or 4 minutes.
Add curry powder and stir well for about 30 seconds before adding
tomatoes.
Bring to a simmer, add chicken pieces and stir well. Cover with a lid
and simmer for 10 minutes.
After this time, stir curry well before adding mushrooms and
cauliflower.
Stir again, cover and cook for a further 15 minutes. Add spinach,
cover and cook until spinach has softened. It takes only a few
minutes. Stir well, add chilli paste and serve.
