Exotic Fruit Salad

INGREDIENTS

6 Lychees
1 Ripe paw-paw
1 Nectarine
2 Figs
2 oz Cape gooseberries
8 oz Strawberries
4 oz Raspberries; golden or red
1 Star fruit
A few sprigs of fresh mint; to decorate

INSTRUCTIONS

1. Peel the lychees and paw-paw, and remove the stone from the nectarine.
Cut the flesh into neat pieces. Slice the figs into thin circles. Pull back
the petals on the Cape gooseberries, wash the strawberries and raspberries
and wash, then thinly slice the star fruit.
2.Arrange each type of fruit in a pile on a large platter, then decorate
with a few sprigs of fresh mint.
